Growing a strawberry is the cheap part. Picking it, chilling it and getting it to you in one piece costs more than twice as much — and in January it hasn't even been grown anywhere near you.
Walk into a shop in the middle of winter and there they are. A little plastic box of strawberries, bright red, in the snow-months.
Somebody grew those. Somebody picked them — by hand, one at a time. Then a chain of people and machines fought very hard to stop them going mouldy long enough to reach you.
This episode is that journey, and what each step of it costs.
Wheat is cut by a machine. Potatoes are dug up by a machine. Strawberries are picked by people, bending down, one berry at a time — because a strawberry is soft enough to bruise if you hold it too tightly, and because on the same plant on the same day some berries are ripe and some are not. A machine can't tell the difference. A person can.
On a big California farm, a picker fills about three trays an hour at the quiet ends of the season, and five to eight trays an hour when the plants are loaded. A tray holds eight one-pound boxes — the little plastic punnets you see in the shop.
So every single punnet in that shop passed through somebody's fingers.
Here is the thing most people never think about. A picked strawberry is still alive. It goes on breathing — slowly using itself up — and the warmer it is, the faster it does that.
A berry picked in a sunny field is full of what growers call field heat, and every minute it stays warm is a minute of its life spent. The rule of thumb is that dropping the temperature by 10°F roughly halves how fast a fruit breathes. So cold isn't a nice-to-have. Cold is time.
Strawberries should be cooled as fast as possible after picking. Wait more than about an hour and a smaller share of the fruit is still good enough to sell.
So trays go straight from the field onto a truck, and the truck drives to a cooler — a room where cold air is dragged through the stacks of fruit rather than just blown around them, which pulls the heat out far faster. That's called forced-air cooling, and it's the standard everywhere.
After that the berries live at about 0°C (32°F) the whole rest of the way: cold room, cold lorry, cold shelf. Even done perfectly, a strawberry gets you somewhere around seven days, and up to ten to fourteen if absolutely everything goes right.
Break the cold chain anywhere — one warm afternoon on a loading bay — and you don't get those days back.

Divide it out and one tray costs about $10.62 to produce. A tray is eight pounds of fruit, so that's about $1.33 a pound before the shop has touched it — of which roughly 41 cents was growing it and 92 cents was everything after.
The shop then has its own costs on top: its own cold rooms, its own staff, its own bin for the ones that spoiled before anyone bought them.

Half the entire year's crop is picked in June and July. And for five months of the year — November through March — that farm picks nothing at all. Not a little. Nothing.
So the strawberries in the shop in January were not grown there. In the United States, winter berries come mostly from Florida, whose season runs roughly December to March, and from Mexico — about 85% of Mexico's strawberry shipments into the US arrive in the winter and spring months.
A further journey. More days in the cold chain. More chances for something to go wrong. And a much smaller number of farms picking, which is the other half of why a winter strawberry costs what it does.
Why would a punnet of strawberries in January cost more than the same punnet in July?
Now the uncomfortable part.
A lot of picked strawberries never get eaten. Across the world, losses between the field and the shelf can run as high as half the crop — bruised in handling, gone mouldy, left too warm too long, or simply not sold before their seven days ran out.
Think about what that means for the ones that do arrive. Somebody paid to grow, pick, chill and haul the ruined ones too. That cost doesn't disappear. It lands on the punnet you actually buy.
Which is why the whole industry is so strange about temperature and speed. Every hour saved between the field and the cooler is not fussiness. It is more of the crop surviving, and every berry that survives makes the rest a little less expensive.
And it's why a strawberry left on a warm kitchen counter for an afternoon is such a shame. All that effort to keep it cold, undone in one afternoon.
